Not only is Rocio a dedicated Poblana with deep affection for her city, but she is also an incredible food historian whose knowledge about Mexican food and culture runs very deeply. A true wealth of knowledge! While food is at the heart of this experience, you will also learn so much more about Puebla’s history, the significance of a number of its sites, and more. It was such a pleasure, and I greatly enjoyed our conversation along the way.
Don’t think too hard about doing this––just do it, and do it early on during your visit to Puebla! (But do take her advice seriously and hold off on breakfast that morning––you will definitely want the room.)Maryam

Rocio’s breadth of knowledge and scholarship are unmatched. In addition, Rocio carries along a variety of visual aids to supplement her explanations. She’s like Mary Poppins with her bag of surprises (but I won’t share any spoilers so you’ll have to find out for yourself). As a solo traveler this was a wonderful way to spend the day and also enjoy the company of a delightful woman!

We researched it and discovered that… read more Rocio had a podcast called “Pass the Chipotle” where she does in depth talks that combine anthropology,history and gastronomy. After listening to about a dozen podcasts we booked her food tour. My partner and I have a love of anthropology, history, Pre-Hispanic Meso America and also how agriculture and trading shaped Meso American culture into what it is today. If you think that the best way to understand another culture is through its food then this tour is for you and you must book this tour. Don’t think this tour is a boring academic lecture because nothing could be further from the truth; it is FUN!!! And the food she provides (all included with the cost ) is so amazing especially when you hear Rocio tell you about why she chooses the places that she does. Everything about Puebla is represented here from the tortillas, the Pulque, the Cemitas, the Tacos Arabes, the pan de aqua and of course the Molé and the Pipian. Rocio is a proud Poblano and wants to tell you all about Puebla; she’s utterly charming, full of humor and has strong opinions ( in a good way) In my opinion, you should book this tour on your first day in Puebla because Rocio explains everything about how Puebla came to be that it will give you a template for the rest of your trip of places you want to do a deeper dive. I cannot say enough about this gem of Puebla that is Rocio Carvajal. This tour is not for everyone; if you’re just here for partying and eating tacos book an amateur tour guide as they are plenty – but if you really want to understand the world view from the mouth of an erudite intellectual that can explain the intersectionality of history, anthropology and gastronomy then Rocio is the only guide you’ll ever need.

And, she was such a warm and gracious host throughout – a very enjoyable day spent with someone who knows and loves this beautiful city. I very much appreciated the small touches – providing water, wipes and hand sanitizer. Even a small bag to carry our takeaway things in. Nice attention to detail.
Come hungry! There is more food than we could eat and that was packaged up for the ride home. My only regret is that I wish we had allotted more time than we did – four hours goes by very quickly and Rocio seemed ready for more. We’ll just have to come back for more!David

I knew I had made the right choice in tour… read more at the first stop with the breakfast foods made from indigenous ingredients and traditional recipes. It was the food/agricultural/cultural/religious and political information and context that went with every step of the tour that made the day such a worthwhile and entertaining day. In total, I think we made 8 or 9 stops and almost all included several different items to taste. I came home with enough food for another two delicious meals. I’m going to tell all my friends that come to Mexico that is is a “must do” activity in Puebla.
