Culinary regions of Mexico: Bajio Ep.47

Posted on September 27, 2019September 30, 2019 by rocio.carvajal.cortes@gmail.com

Presented by: Rocio Carvajal Food history writer, cook and author.

Episode 47

Season 4 of the podcast premieres with the culinary region of the Bajio, located in the central-north planes of Mexico. We explore the beautiful states of Guanajuato, Aguascalientes and Querétaro. The Bajío is the perfect example of romantic country life, with delicious and soulful food, large rural states that overview fields of cereals, and agaves, making it the perfect setting for many romantic films of the golden age of Mexico’s cinema.

These are some beautiful examples of the Otomi Ceremonial tortillas mentioned on this episode.
